- 1 cup unsweetened shredded coconut

- 1/4 cup sweetened condensed milk
- 1 teaspoon vanilla extract

Instructions
- In a food processor, pulse the shredded coconut until finely ground.
- Add the chopped maraschino cherries, chopped chocolate, sweetened condensed milk, vanilla extract, and salt to the food processor.
- Pulse until the mixture is well combined and forms a sticky dough.
- Scoop out tablespoon-sized portions of the mixture and roll into balls.
- Place the balls on a baking sheet lined with parchment paper and refrigerate for at least 1 hour to firm up.
- Melt additional chocolate for coating, if desired, and dip the truffles before serving.
Notes
For best results, use high-quality chocolate and store truffles in an airtight container in the refrigerator for up to a week.
