Cinnamon Churro Cheesecake Bars

A delicious fusion of churros and cheesecake in bar form, featuring a cinnamon-sugar crust and creamy cheesecake filling.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1 tbsp ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • 2 tbsp butter, melted
  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, 1/3 cup sugar, 1 tbsp cinnamon, and melted butter. Press firmly into the prepared pan.
  3. In another bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
  4. Pour cheesecake mixture over crust. Bake for 30 minutes or until center is set. Let cool completely.
  5. Mix remaining 2 tbsp melted butter, 2 tbsp sugar, and 1 tsp cinnamon. Brush over cooled cheesecake before cutting into bars.

Notes

You can customize the seasonings to taste.
