For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 1 tbsp ground cinnamon
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup sour cream
- 2 tbsp butter, melted
- 2 tbsp granulated sugar
- 1 tsp ground cinnamon
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- In a bowl, mix graham cracker crumbs, 1/3 cup sugar, 1 tbsp cinnamon, and melted butter. Press firmly into the prepared pan.
- In another bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
- Pour cheesecake mixture over crust. Bake for 30 minutes or until center is set. Let cool completely.
- Mix remaining 2 tbsp melted butter, 2 tbsp sugar, and 1 tsp cinnamon. Brush over cooled cheesecake before cutting into bars.
