Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, 1 teaspoon ground cinnamon, and salt.
- In a large bowl, cream together 1 cup softened butter, 3/4 cup granulated sugar, and 3/4 cup brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In a small bowl, mix together 1 tablespoon ground cinnamon and 1/4 cup granulated sugar for the filling.
- Roll the dough into a rectangle on a floured surface, spread with 1/4 cup softened butter, and sprinkle with the cinnamon-sugar mixture.
- Roll the dough into a log and chill for 30 minutes.
- Slice the log into 1/2-inch thick cookies and place on prepared baking sheets.
- Bake for 10-12 minutes or until edges are lightly golden.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For a gooier center, underbake slightly. Store in an airtight container for up to 3 days.
