Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, 1 teaspoon ground cinnamon, and salt.
  3. In a large bowl, cream together 1 cup softened butter, 3/4 cup granulated sugar, and 3/4 cup brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In a small bowl, mix together 1 tablespoon ground cinnamon and 1/4 cup granulated sugar for the filling.
  7. Roll the dough into a rectangle on a floured surface, spread with 1/4 cup softened butter, and sprinkle with the cinnamon-sugar mixture.
  8. Roll the dough into a log and chill for 30 minutes.
  9. Slice the log into 1/2-inch thick cookies and place on prepared baking sheets.
  10. Bake for 10-12 minutes or until edges are lightly golden.
  11. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
