For the Crust:
- 6 cups cubed day-old bread
- 4 large eggs
- 1 cup milk
- 2 tbsp granulated sugar
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp nutmeg
- Zest of 1 lemon
- 1/4 cup melted butter
- 1/4 cup brown sugar
- 1 tsp cinnamon (for topping)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F. Grease a 12-cup muffin tin.
- In a large bowl, whisk together eggs, milk, sugar, vanilla, cinnamon, nutmeg, and lemon zest.
- Add bread cubes to the egg mixture and gently toss until all bread is coated. Let sit for 10 minutes.
- Divide mixture evenly among prepared muffin cups, pressing down slightly.
- Bake for 20-25 minutes until golden and set.
- While warm, brush tops with melted butter and sprinkle with cinnamon sugar mixture (brown sugar + cinnamon).
- Cool for 5 minutes before removing from pan.
