Cinnamon Sugar French Toast Muffins with Lemon Zest

Delicious French toast in muffin form, with a cinnamon sugar crust and bright lemon zest.

For the Crust:

  • 6 cups cubed day-old bread
  • 4 large eggs
  • 1 cup milk
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • Zest of 1 lemon
  • 1/4 cup melted butter
  • 1/4 cup brown sugar
  • 1 tsp cinnamon (for topping)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F. Grease a 12-cup muffin tin.
  2. In a large bowl, whisk together eggs, milk, sugar, vanilla, cinnamon, nutmeg, and lemon zest.
  3. Add bread cubes to the egg mixture and gently toss until all bread is coated. Let sit for 10 minutes.
  4. Divide mixture evenly among prepared muffin cups, pressing down slightly.
  5. Bake for 20-25 minutes until golden and set.
  6. While warm, brush tops with melted butter and sprinkle with cinnamon sugar mixture (brown sugar + cinnamon).
  7. Cool for 5 minutes before removing from pan.

Notes

You can customize the seasonings to taste.
