- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/3 cup vegetable oil
- 1 large egg
- For Honey Butter: 1/2 cup butter, softened
- 2 tablespoons honey
Instructions
- Preheat oven to 400 degrees F (200 degrees C). Place a 9-inch cast-iron skillet in the oven to heat.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together milk, oil, and egg.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Carefully remove the hot skillet from the oven and add a little oil or butter to coat.
- Pour the batter into the skillet and smooth the top.
- Bake for 20-25 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
- For Honey Butter: In a small bowl, mix softened butter and honey until smooth. Serve with the warm cornbread.
