- 1 lb country-style sausage
- 6 large eggs
- 2 lbs Yukon Gold potatoes, diced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Preheat a skillet over medium heat and form the sausage into patties. Cook for 4-5 minutes per side until browned and cooked through. Set aside.
- In the same skillet, add olive oil and sauté the onion and garlic until softened, about 3 minutes.
- Add diced potatoes, paprika, salt, and pepper. Cook for 15-20 minutes, stirring occasionally, until potatoes are tender and crispy.
- In a separate pan, scramble the eggs until set, seasoning with salt and pepper.
- Serve the sausage patties with eggs and potatoes. Garnish with parsley.
Notes
For extra crispiness, you can broil the potatoes for the last 5 minutes. Adjust seasoning to taste and ensure sausage is fully cooked.
