Ingredients

  • 1 lb country-style sausage
  • 6 large eggs
  • 2 lbs Yukon Gold potatoes, diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat a skillet over medium heat and form the sausage into patties. Cook for 4-5 minutes per side until browned and cooked through. Set aside.
  2. In the same skillet, add olive oil and sauté the onion and garlic until softened, about 3 minutes.
  3. Add diced potatoes, paprika, salt, and pepper. Cook for 15-20 minutes, stirring occasionally, until potatoes are tender and crispy.
  4. In a separate pan, scramble the eggs until set, seasoning with salt and pepper.
  5. Serve the sausage patties with eggs and potatoes. Garnish with parsley.

Notes

For extra crispiness, you can broil the potatoes for the last 5 minutes. Adjust seasoning to taste and ensure sausage is fully cooked.
