- 1 lb ground pork sausage
- 1 tablespoon vegetable oil
- 6 large eggs
- 1/4 cup whole milk
- Salt and pepper to taste
- 4 medium potatoes, peeled and diced
- 1 onion, chopped
- 2 tablespoons butter
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
Instructions
- In a large skillet, heat the vegetable oil over medium heat. Shape the ground pork sausage into patties and cook for 5-7 minutes per side until browned and cooked through. Remove from skillet and set aside.
- In the same skillet, melt the butter over medium heat. Add the diced potatoes and chopped onion. Season with salt, pepper, paprika, and garlic powder. Cook for 15-20 minutes, stirring occasionally, until potatoes are tender and golden.
- While potatoes cook, whisk together the eggs and milk in a bowl. Season with salt and pepper.
- Push potatoes to one side of the skillet. Pour the egg mixture into the other side. Scramble the eggs until just set, about 3-5 minutes.
- Serve the sausage patties, scrambled eggs, and breakfast potatoes hot.
Notes
For crispier potatoes, parboil them before adding to the skillet. Use your favorite hot sauce for extra flavor.
