Country-Style Sausage Patties with Eggs and Breakfast Potatoes

Ingredients

  • 1 lb ground pork sausage
  • 1 tablespoon vegetable oil
  • 6 large eggs
  • 1/4 cup whole milk
  • Salt and pepper to taste
  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 2 tablespoons butter
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Shape the ground pork sausage into patties and cook for 5-7 minutes per side until browned and cooked through. Remove from skillet and set aside.
  2. In the same skillet, melt the butter over medium heat. Add the diced potatoes and chopped onion. Season with salt, pepper, paprika, and garlic powder. Cook for 15-20 minutes, stirring occasionally, until potatoes are tender and golden.
  3. While potatoes cook, whisk together the eggs and milk in a bowl. Season with salt and pepper.
  4. Push potatoes to one side of the skillet. Pour the egg mixture into the other side. Scramble the eggs until just set, about 3-5 minutes.
  5. Serve the sausage patties, scrambled eggs, and breakfast potatoes hot.

Notes

For crispier potatoes, parboil them before adding to the skillet. Use your favorite hot sauce for extra flavor.
