- 4 medium potatoes, diced
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika
- For the eggs:
- 6 large eggs
- 2 tablespoons milk
- Salt and pepper to taste
Instructions
- For the sausage patties:
- In a bowl, mix ground pork with salt, pepper, garlic powder, onion powder, and red pepper flakes.
- Form into 8 patties.
- Heat a skillet over medium heat; cook patties for 4-5 minutes per side until browned and cooked through.
- For the breakfast potatoes:
- Toss diced potatoes with olive oil, salt, pepper, and paprika.
- Bake at 425°F for 20-25 minutes until crispy.
- For the eggs:
- Whisk eggs with milk, salt, and pepper.
- Cook in a skillet over medium heat, stirring until set.
Notes
Serve hot with toast or fresh fruit. Adjust seasonings to taste. Store leftovers in an airtight container for up to 2 days.
