Country-Style Sausage Patties with Eggs and Breakfast Potatoes

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon olive oil (for cooking)
  • For the breakfast potatoes:
  • 4 medium russet potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • For the eggs:
  • 8 large eggs
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Make the sausage patties: In a large bowl, combine the ground pork, salt, black pepper, garlic powder, onion powder, paprika, and red pepper flakes. Mix well with your hands until evenly distributed. Divide the mixture into 8 equal portions and shape into patties about 1/2 inch thick.
  2. Heat the olive oil in a large skillet over medium heat. Add the sausage patties and cook for 4-5 minutes per side, or until browned and cooked through. Remove to a plate and keep warm.
  3. Meanwhile, prepare the breakfast potatoes: In the same skillet (or another large skillet), heat the vegetable oil over medium-high heat. Add the diced potatoes and chopped onion. Season with salt and black pepper. Cook, stirring occasionally, for 15-20 minutes, or until the potatoes are golden and crispy on the outside and tender inside.
  4. While the potatoes are cooking, prepare the eggs: In a separate large skillet or non-stick pan, melt the butter over medium heat. Crack the eggs into the pan and cook to your desired doneness – sunny side up, over easy, scrambled, etc. Season with salt and pepper.
  5. Serve the sausage patties alongside the eggs and breakfast potatoes. Enjoy hot!

Notes

For extra flavor, you can add chopped fresh herbs like parsley or chives to the eggs. Use any type of potatoes you have on hand, and adjust seasoning to taste.
