- Sausage:
- 1 pound ground pork
- 1 teaspoon salt
- ¾ teaspoon freshly ground black pepper
- ½ teaspoon ground sage
- Potatoes:
- 4 slices bacon
- 4 large Russet potatoes, peeled and cubed
- 1 tablespoon olive oil
- Salt and ground black pepper to taste
- Eggs:
- 2 eggs, beaten
- ¼ cup shredded Cheddar cheese (optional)
Instructions
- Mix ground pork in a bowl with salt, black pepper, and sage. Form into 8 small patties.
- Heat 1 tablespoon vegetable oil in a large skillet over medium heat. Fry patties until browned and no longer pink in the center, about 5 minutes per side. An instant-read thermometer inserted into the center should read at least 160 degrees F (73 degrees C). Transfer sausage patties to a paper towel-lined plate to drain.
- Place bacon in the same skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
- Cook and stir potatoes in the same skillet until golden brown and crisp, about 15 minutes. Season with salt and black pepper.
- Heat olive oil in a separate small skillet over medium-high heat until hot. Pour in eggs; cook and stir until mostly set, about 30 seconds. Stir in Cheddar cheese and cook until set, 1 to 2 minutes.
- To serve, top sausage patties with bacon, eggs, and potatoes.
Notes
You can prepare the sausage patties ahead and reheat them. Use any type of cheese you prefer for the eggs. If the potatoes aren’t crispy enough, increase the heat and cook longer. Cook times may vary based on stove and skillet type.
