Cowboy Butter Chicken Pasta

Creamy, garlicky, and packed with bold flavor, this Cowboy Butter Chicken Pasta is a weeknight winner.

For the Crust:

  • 12 oz penne pasta
  • 2 boneless, skinless chicken breasts, cubed
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Season chicken with salt, black pepper, and smoked paprika. In a large skillet, melt 1 tbsp butter over medium heat and cook chicken until golden and cooked through. Remove and set aside.
  3. In the same skillet, melt remaining butter. Add garlic and sauté until fragrant, about 30 seconds.
  4. Pour in heavy cream, stirring constantly. Add parmesan cheese, cayenne pepper, and oregano. Simmer until sauce thickens slightly.
  5. Return cooked chicken to the skillet and add cooked pasta. Toss until well coated in the sauce.
  6. Garnish with fresh parsley and serve immediately.

Notes

You can customize the seasonings to taste.
