Cowboy Stew

A hearty and flavorful stew packed with meat, beans, and vegetables, perfect for a cold day.

For the Crust:

  • 1 lb ground beef
  • 1 lb smoked sausage, sliced
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained
  • 1 can (15 oz) pinto beans, drained
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 cup beef broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large pot or Dutch oven, brown the ground beef and sausage over medium heat until fully cooked. Drain excess fat.
  2. Add the onion, bell pepper, and garlic to the pot. Cook until vegetables are softened, about 5 minutes.
  3. Stir in the kidney beans, pinto beans, corn, diced tomatoes, tomato sauce, beef broth, chili powder, and cumin. Season with salt and pepper.
  4. Bring the stew to a simmer, then reduce heat to low. Cover and let cook for 20-25 minutes, stirring occasionally.
  5. Taste and adjust seasonings as needed. Serve hot with cornbread or crackers.

Notes

You can customize the seasonings to taste.
