Cozy Chicken and Dumplings Soup

  • 2 carrots, sliced

  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Dumplings:
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons butter, melted

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, carrots, and celery; cook until softened, about 5 minutes.
  3. Stir in garlic and cook for another minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add shredded chicken, thyme, salt, and pepper; simmer for 10 minutes.
  6. Dumplings Instructions:
  7. In a bowl, mix flour, baking powder, and salt.
  8. Stir in milk and melted butter to form a dough.
  9. Drop spoonfuls of dough into the simmering soup.
  10. Cover and cook for 15 minutes until dumplings are cooked through.

Notes

For a thicker soup, add a slurry of flour and water. Serve immediately for best flavor.
