Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Dumplings:
- 1 cup flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 2 tablespoons butter, melted
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion, carrots, and celery; cook until softened, about 5 minutes.
- Stir in garlic and cook for another minute.
- Pour in chicken broth and bring to a boil.
- Add shredded chicken, thyme, salt, and pepper; simmer for 10 minutes.
- Dumplings Instructions:
- In a bowl, mix flour, baking powder, and salt.
- Stir in milk and melted butter to form a dough.
- Drop spoonfuls of dough into the simmering soup.
- Cover and cook for 15 minutes until dumplings are cooked through.
Notes
For a thicker soup, add a slurry of flour and water. Serve immediately for best flavor.
