For the Crust:
- 1 lb fresh crab meat
- 1/2 cup breadcrumbs
- 1/4 cup mayonnaise
- 1 egg, beaten
- 2 tbsp fresh cilantro, chopped
- 1 tbsp lime zest
- 1 tbsp lime juice
- 1 tsp Dijon mustard
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp vegetable oil for frying
Instructions
1. Prepare the Crust:
- In a large bowl, combine crab meat, breadcrumbs, mayonnaise, egg, cilantro, lime zest, lime juice, Dijon mustard, garlic powder, salt, and black pepper.
- Mix gently until well combined, being careful not to break up the crab meat too much.
- Form the mixture into 8 equal-sized patties and place on a plate.
- Heat vegetable oil in a large skillet over medium heat.
- Cook crab cakes for 3-4 minutes per side, until golden brown and crispy.
- Remove from skillet and drain on paper towels before serving.
