- 2 large sweet potatoes, peeled and cubed
- 1 cup fresh cranberries
- 2 medium apples, cored and sliced
- 2 tablespoons olive oil
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 cup maple syrup
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the cubed sweet potatoes with olive oil, cinnamon, nutmeg, salt, and pepper.
- Add the sliced apples and fresh cranberries to the bowl and mix well.
- Drizzle with maple syrup and stir to coat evenly.
- Spread the mixture evenly on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the sweet potatoes are tender and caramelized.
Notes
For a crispier texture, roast an additional 5 minutes. Serve warm as a side dish.
