Cranberry Apple Roasted Sweet Potatoes

A delicious holiday side dish combining sweet potatoes, tart cranberries, and fresh apples with warm spices.

Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 cup fresh cranberries
  • 2 medium apples, cored and sliced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 cup maple syrup
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the cubed sweet potatoes with olive oil, cinnamon, nutmeg, salt, and pepper.
  3. Add the sliced apples and fresh cranberries to the bowl and mix well.
  4. Drizzle with maple syrup and stir to coat evenly.
  5. Spread the mixture evenly on a baking sheet.
  6. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the sweet potatoes are tender and caramelized.

Notes

For a crispier texture, roast an additional 5 minutes. Serve warm as a side dish.
