  • 1.5 lbs pork tenderloin
  • 1 cup fresh cranberries
  • 1/2 cup orange juice
  • 1/4 cup brown sugar
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Zest of 1 orange

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix together the cranberries, orange juice, brown sugar, olive oil, salt, pepper, garlic powder, onion powder, and orange zest.
  3. Place the pork tenderloin in a baking dish and pour the cranberry mixture over it.
  4. Cover the dish with aluminum foil and bake for 25 minutes.
  5. Remove the foil and bake for an additional 15-20 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
  6. Let the pork rest for 5 minutes before slicing and serving with the cranberry sauce.

Notes
