- 1.5 lbs pork tenderloin
- 1 cup fresh cranberries
- 1/2 cup orange juice
- 1/4 cup brown sugar
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Zest of 1 orange
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix together the cranberries, orange juice, brown sugar, olive oil, salt, pepper, garlic powder, onion powder, and orange zest.
- Place the pork tenderloin in a baking dish and pour the cranberry mixture over it.
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
- Let the pork rest for 5 minutes before slicing and serving with the cranberry sauce.
Notes
For a sweeter sauce, add more brown sugar to taste.
Serve with roasted vegetables or mashed potatoes for a complete meal.
Leftovers can be stored in the refrigerator for up to 3 days.
