For the Crust:
- 8 oz pasta (penne or fusilli)
- 2 ripe avocados, peeled and pitted
- 1/4 cup fresh lime juice
- 1/4 cup olive oil
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely diced
- 1/4 cup fresh cilantro, chopped
Instructions
1. Prepare the Crust:
- Cook pasta according to package instructions. Drain and rinse under cold water.
- In a blender, combine avocados, lime juice, olive oil, garlic, salt, and pepper. Blend until smooth.
- In a large bowl, mix the cooked pasta, avocado dressing, cherry tomatoes, red onion, and cilantro.
- Toss gently until all ingredients are well coated with the dressing.
- Chill in the refrigerator for at least 30 minutes before serving.

You can customize the seasonings to taste.
