Creamy Avocado Pasta Salad

A refreshing and creamy pasta salad with avocado dressing, perfect for summer meals.

For the Crust:

  • 8 oz pasta (penne or fusilli)
  • 2 ripe avocados
  • 1/4 cup Greek yogurt
  • 2 tbsp lemon juice
  • 1 clove garlic (minced)
  • 1/4 cup fresh cilantro (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup red onion (diced)
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Cook pasta according to package instructions, then rinse under cold water and drain.
  2. In a blender, combine avocados, Greek yogurt, lemon juice, garlic, cilantro, salt, and pepper. Blend until smooth.
  3. In a large bowl, mix the cooked pasta with the avocado dressing until well coated.
  4. Gently fold in cherry tomatoes and red onion.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes
