For the Crust:
- 8 oz pasta (penne or fusilli)
- 2 ripe avocados
- 1/4 cup Greek yogurt
- 2 tbsp lemon juice
- 1 clove garlic (minced)
- 1/4 cup fresh cilantro (chopped)
- 1 cup cherry tomatoes (halved)
- 1/2 cup red onion (diced)
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Cook pasta according to package instructions, then rinse under cold water and drain.
- In a blender, combine avocados, Greek yogurt, lemon juice, garlic, cilantro, salt, and pepper. Blend until smooth.
- In a large bowl, mix the cooked pasta with the avocado dressing until well coated.
- Gently fold in cherry tomatoes and red onion.
- Chill in the refrigerator for at least 30 minutes before serving.

You can customize the seasonings to taste.
