For the Crust:
- 8 oz pasta (penne or fusilli)
- 2 ripe avocados
- 1/4 cup fresh cilantro, chopped
- 2 tbsp lime juice
- 1 clove garlic, minced
- 1/4 cup plain Greek yogurt
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Cook pasta according to package instructions. Drain and rinse under cold water.
- In a blender, combine avocados, cilantro, lime juice, garlic, Greek yogurt, salt, and pepper. Blend until smooth.
- In a large bowl, mix the cooked pasta, cherry tomatoes, and red onion. Pour the avocado dressing over and toss until well coated.
- Chill in the refrigerator for at least 30 minutes before serving.

You can customize the seasonings to taste.
