Creamy Avocado Pasta Salad

A refreshing and creamy pasta salad with avocado dressing, perfect for summer picnics or light lunches.

For the Crust:

  • 8 oz pasta (fusilli or penne)
  • 2 ripe avocados
  • 1/4 cup Greek yogurt
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Cook pasta according to package instructions. Drain and rinse under cold water.
  2. In a blender, combine avocados, Greek yogurt, lemon juice, garlic, cilantro, salt, and pepper. Blend until smooth.
  3. In a large bowl, mix the cooked pasta, cherry tomatoes, and red onion.
  4. Pour the avocado dressing over the pasta and toss until evenly coated.
  5. Chill in the refrigerator for at least 30 minutes before serving.
