Creamy Banana Pudding Cheesecake Bars

A delicious fusion of banana pudding and cheesecake in easy-to-serve bar form.

For the Crust:

  • 2 cups vanilla wafer cookies, crushed
  • 6 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 box (3.4 oz) instant banana pudding mix
  • 1 1/2 cups cold milk
  • 2 ripe bananas, sliced
  • 1 cup whipped topping

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F. Line an 8Γ—8 baking dish with parchment paper.
  2. Mix crushed wafers with melted butter and press firmly into the bottom of the dish. Bake for 8 minutes, then cool.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Pour over crust.
  4. Bake 25-30 minutes until center is set. Cool completely.
  5. Whisk pudding mix with milk for 2 minutes. Let stand 5 minutes to thicken.
  6. Spread pudding over cooled cheesecake layer. Top with banana slices and whipped topping.
  7. Refrigerate at least 4 hours before cutting into bars.

Notes

You can customize the seasonings to taste.
