For the Crust:
- 2 cups vanilla wafer cookies, crushed
- 6 tbsp unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 box (3.4 oz) instant banana pudding mix
- 1 1/2 cups cold milk
- 2 ripe bananas, sliced
- 1 cup whipped topping
Instructions
1. Prepare the Crust:
- Preheat oven to 350Β°F. Line an 8Γ8 baking dish with parchment paper.
- Mix crushed wafers with melted butter and press firmly into the bottom of the dish. Bake for 8 minutes, then cool.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Pour over crust.
- Bake 25-30 minutes until center is set. Cool completely.
- Whisk pudding mix with milk for 2 minutes. Let stand 5 minutes to thicken.
- Spread pudding over cooled cheesecake layer. Top with banana slices and whipped topping.
- Refrigerate at least 4 hours before cutting into bars.
