Creamy Beef & Cilantro Soup with Rice is a hearty, flavorful comfort meal packed with fresh herbs and warmth.

  • 1large poblano pepper, cored and diced
  • 1small white onion, diced
  • 1 tablespoonavocado oil (or olive oil)
  • 1serrano or jalapeño pepper, diced (or1 tablespoonmild chili paste)
  • 5garlic cloves, minced
  • 1bunch fresh cilantro leaves
  • Juice of1lime
  • Soup Base
  • 6 cupsbeef broth, divided
  • 2 cupscooked beef, shredded or diced (use brisket, flank steak, or leftover roast)
  • 1pound Yukon gold potatoes, diced
  • 2large carrots, peeled and diced
  • ½ cuprice (white or brown)
  • ½ cuppeas
  • 2 teaspoonsground cumin
  • Salt and black pepper, to taste
  • Garnishes (optional)
  • Chopped fresh cilantro
  • Thinly sliced green onions
  • Lime wedges

Instructions

  1. 1. Sauté the Flavor Base
  2. Heat olive or avocado oil in a large soup pot over medium heat.
  3. Add the diced poblano pepper and onion. Sauté for 5–6 minutes, stirring occasionally, until the onion becomes translucent.
  4. Stir in the diced serrano (or chili paste) and minced garlic. Continue to cook for 1 more minute, just until fragrant.
  5. Remove from heat and set the mixture aside to cool slightly.
  6. 2. Cook the Soup Base
  7. Return the pot to the stove and pour in 5 cups of beef broth.
  8. Add the shredded beef, diced potatoes, carrots, rice, peas, and cumin. Stir to mix everything well.
  9. Bring the mixture to a boil, then reduce the heat to low and simmer gently for 25–30 minutes, or until the potatoes are soft and the rice is cooked through.
  10. 3. Blend the Cilantro Mixture
  11. While the soup simmers, transfer the cooled pepper-onion mixture to a blender.
  12. Add cilantro leaves, lime juice, and the remaining 1 cup of beef broth.
  13. Blend on high for 1–2 minutes until smooth and creamy.
  14. 4. Combine and Adjust Seasoning
  15. Pour the blended cilantro mixture into the pot and stir well to combine.
  16. Simmer for another 5–10 minutes to let the flavors meld.
  17. Taste the soup and adjust seasoning with salt and black pepper as needed.
  18. 5. Serve and Garnish
  19. Ladle the hot soup into bowls and garnish with chopped cilantro, green onions, or a squeeze of fresh lime juice for extra brightness.
