- 1large poblano pepper, cored and diced
- 1small white onion, diced
- 1 tablespoonavocado oil (or olive oil)
- 1serrano or jalapeño pepper, diced (or1 tablespoonmild chili paste)

- 6 cupsbeef broth, divided
- 2 cupscooked beef, shredded or diced (use brisket, flank steak, or leftover roast)
- 1pound Yukon gold potatoes, diced
- 2large carrots, peeled and diced
- ½ cuprice (white or brown)
- ½ cuppeas
- 2 teaspoonsground cumin
- Salt and black pepper, to taste
- Garnishes (optional)
- Chopped fresh cilantro
- Thinly sliced green onions
- Lime wedges
Instructions
- 1. Sauté the Flavor Base
- Heat olive or avocado oil in a large soup pot over medium heat.
- Add the diced poblano pepper and onion. Sauté for 5–6 minutes, stirring occasionally, until the onion becomes translucent.
- Stir in the diced serrano (or chili paste) and minced garlic. Continue to cook for 1 more minute, just until fragrant.
- Remove from heat and set the mixture aside to cool slightly.
- 2. Cook the Soup Base
- Return the pot to the stove and pour in 5 cups of beef broth.
- Add the shredded beef, diced potatoes, carrots, rice, peas, and cumin. Stir to mix everything well.
- Bring the mixture to a boil, then reduce the heat to low and simmer gently for 25–30 minutes, or until the potatoes are soft and the rice is cooked through.
- 3. Blend the Cilantro Mixture
- While the soup simmers, transfer the cooled pepper-onion mixture to a blender.
- Add cilantro leaves, lime juice, and the remaining 1 cup of beef broth.
- Blend on high for 1–2 minutes until smooth and creamy.
- 4. Combine and Adjust Seasoning
- Pour the blended cilantro mixture into the pot and stir well to combine.
- Simmer for another 5–10 minutes to let the flavors meld.
- Taste the soup and adjust seasoning with salt and black pepper as needed.
- 5. Serve and Garnish
- Ladle the hot soup into bowls and garnish with chopped cilantro, green onions, or a squeeze of fresh lime juice for extra brightness.
