Creamy Beef Cilantro Soup with Rice

Ingredients

  • 1 lb ground beef
  • 2 cups fresh cilantro, chopped
  • 1 cup uncooked rice
  • 4 cups beef broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add diced onion and minced garlic; sauté until softened.
  3. Stir in uncooked rice and beef broth; bring to a boil.
  4. Reduce heat and simmer for 15 minutes until rice is tender.
  5. Add chopped cilantro and heavy cream; stir well and cook for another 5 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot in bowls.

Notes

For a spicier version, add chopped jalapeños.
