- 16 ounces fresh crimini mushrooms
- 1 yellow onion
- 2 cloves garlic
- 4 tablespoons butter unsalted
- 4 cups chicken stock
- 1 pound chicken breasts boneless & skinless
- 3 tablespoons dry sherry
- 1 cup half and half
- 1/4 teaspoon hot pepper flakes
- 2 sprigs fresh parsley
Instructions
- Prepare the ingredients: Clean and slice the mushrooms. Dice the onion and mince the garlic.
- Melt butter in a large soup pot over medium heat. Add mushrooms and onion; sauté until softened, about 6-8 minutes.
- Add minced garlic; cook another 1-2 minutes until fragrant.
- Pour in chicken stock and add chicken breasts. Bring to a gentle simmer and cook for 15-20 minutes, until the chicken is cooked through.
- Remove the chicken, shred or cube, and return it to the pot.
- Stir in dry sherry, half and half, and hot pepper flakes. Simmer for 2-3 minutes, stirring frequently.
- Taste and adjust seasoning if needed. Garnish with chopped fresh parsley before serving.
