- 1 pound chicken breast, cubed
- 8 ounces penne pasta
- 1 cup mushrooms, sliced
- 1 cup carrots, diced
- 1 cup potatoes, diced
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Cook the penne pasta according to package instructions until al dente; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add cubed chicken breast and cook until browned and cooked through, about 5-7 minutes.
- Add minced garlic, sliced mushrooms, diced carrots, and diced potatoes to the skillet. Sauté for 5-6 minutes until vegetables begin to soften.
- Pour in the heavy cream and stir to combine. Season with salt and pepper to taste. Simmer for 10 minutes until the sauce thickens.
- Add the cooked penne pasta to the skillet and toss everything together until well coated.
- Serve hot, garnished with fresh herbs if desired.
