Creamy Coffee Swirl Cheesecake

A rich and creamy cheesecake with a delightful coffee swirl, perfect for coffee lovers.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp melted butter
  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup strong brewed coffee, cooled
  • 1 tbsp instant coffee granules
  • 1 cup sour cream

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
  2. In a large bowl, beat cream cheese and 3/4 cup sugar until smooth. Add eggs one at a time, then vanilla.
  3. Dissolve instant coffee in brewed coffee. Reserve 1/2 cup of the cheesecake batter and mix with the coffee mixture.
  4. Pour the plain cheesecake batter over the crust. Drop spoonfuls of coffee batter on top and swirl with a knife.
  5. Bake for 45-50 minutes until the center is almost set. Let cool, then refrigerate for at least 4 hours before serving.
