Creamy Parmesan Italian Sausage Soup

A rich and comforting soup with Italian sausage, creamy broth, and Parmesan cheese.

For the Crust:

  • 1 lb Italian sausage, casings removed
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 cups fresh spinach, chopped

Instructions

1. Prepare the Crust:

  1. In a large pot, cook the Italian sausage over medium heat until browned, breaking it into crumbles as it cooks.
  2. Add the diced onion and minced garlic to the pot. Sauté until the onion is translucent, about 3-4 minutes.
  3. Pour in the chicken broth and bring the mixture to a simmer. Let it cook for 10 minutes.
  4. Stir in the heavy cream, Parmesan cheese, basil, oregano, and red pepper flakes (if using). Season with salt and black pepper to taste.
  5. Simmer for another 5 minutes, then add the chopped spinach. Cook until the spinach is wilted, about 2 minutes.
  6. Serve hot with extra Parmesan cheese on top if desired.

Notes

You can customize the seasonings to taste.
