Creamy Peanut Butter Chocolate Éclair Delight

For the Crust:

  • 1 package (14.4 oz) frozen éclair shells
  • 1 cup creamy peanut butter
  • 1 package (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup butter

Instructions

1. Prepare the Crust:

  1. Thaw éclair shells according to package instructions and slice them in half horizontally.
  2. In a large bowl, beat peanut butter, cream cheese, powdered sugar, and vanilla until smooth.
  3. In another bowl, whip the heavy cream until stiff peaks form, then fold into the peanut butter mixture.
  4. Spread the peanut butter filling onto the bottom halves of the éclair shells and replace the tops.
  5. Melt chocolate chips and butter together in a microwave-safe bowl, stirring until smooth.
  6. Drizzle or spread the chocolate glaze over the filled éclairs.
  7. Refrigerate for at least 1 hour before serving.
