For the Crust:
- 1 package (14.4 oz) frozen éclair shells
- 1 cup creamy peanut butter
- 1 package (8 oz) cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 cup semi-sweet chocolate chips
- 1/4 cup butter
Instructions
1. Prepare the Crust:
- Thaw éclair shells according to package instructions and slice them in half horizontally.
- In a large bowl, beat peanut butter, cream cheese, powdered sugar, and vanilla until smooth.
- In another bowl, whip the heavy cream until stiff peaks form, then fold into the peanut butter mixture.
- Spread the peanut butter filling onto the bottom halves of the éclair shells and replace the tops.
- Melt chocolate chips and butter together in a microwave-safe bowl, stirring until smooth.
- Drizzle or spread the chocolate glaze over the filled éclairs.
- Refrigerate for at least 1 hour before serving.
