- 1/4 cup butter.
- 1 medium onion, diced.
- 1 teaspoon Old Bay seasoning.
- 1/4 teaspoon dried thyme.
- 1/4 cup all-purpose flour.
- 1 celery rib, sliced.
- 1 carrot, sliced.
- 1 pound potatoes, peeled and cubed.
- 1/2 cup corn kernels.
- 5 cups chicken or seafood broth.
- 1/2 cup white wine.
- 8 ounces white fish chunks.
- 8 ounces sea scallops.
- 12 ounces medium shrimp, peeled.
- 6.5 ounces chopped clams, drained.
- 2 cups heavy cream.
- 1 tablespoon fresh parsley.
Instructions
- Melt butter in large pot and cook diced onion until softened and translucent.
- Stir in flour, Old Bay seasoning and thyme, cooking for 2-3 minutes to remove raw flour taste.
- Add sliced carrots, celery, cubed potatoes, corn kernels, broth and wine to the pot.
- Bring mixture to a boil, then reduce heat and simmer for 10 minutes until vegetables start softening.
- Carefully add all seafood – fish, scallops, shrimp and clams to the simmering broth.
- Pour in heavy cream and continue cooking 8-10 minutes until fish flakes and potatoes are tender.
- Season to taste with salt and pepper, then stir in fresh chopped parsley before serving.
