For the Crust:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 cup strawberry jam
Instructions
1. Prepare the Crust:
- Preheat oven to 350Β°F (175Β°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla.
- Whisk together flour, baking powder, and salt in a separate bowl. Gradually mix into the butter mixture until a dough forms.
- In another bowl, beat cream cheese and powdered sugar until smooth.
- Roll dough into 1-inch balls, flatten slightly, and place a small dollop of cream cheese mixture and strawberry jam in the center. Fold dough over to seal and form a ball.
- Bake for 12-15 minutes or until edges are lightly golden. Let cool on baking sheets for 5 minutes before transferring to a wire rack.
