Creamy Sun-Dried Tomato Basil Chicken

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium heat and cook chicken until browned and cooked through, about 6-8 minutes per side.
  3. Remove chicken from skillet and set aside.
  4. In the same skillet, add garlic and sun-dried tomatoes, sauté for 2 minutes.
  5. Stir in heavy cream and bring to a simmer.
  6. Return chicken to the skillet and cook for another 5 minutes, stirring in fresh basil at the end.
  7. Serve hot.

Notes

For a lighter version, substitute heavy cream with half-and-half.
