- 2 boneless, skinless chicken breasts
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium heat and cook chicken until browned and cooked through, about 6-8 minutes per side.
- Remove chicken from skillet and set aside.
- In the same skillet, add garlic and sun-dried tomatoes, sauté for 2 minutes.
- Stir in heavy cream and bring to a simmer.
- Return chicken to the skillet and cook for another 5 minutes, stirring in fresh basil at the end.
- Serve hot.
Notes
For a lighter version, substitute heavy cream with half-and-half.
