Italian Sausage Soup

A hearty Italian soup featuring spicy sausage, tender potatoes, and fresh kale in a rich, creamy broth. Perfect winter comfort food.

Ingredients

  • 1/2 pound Italian sausage.
  • 1 yellow onion.
  • 2 garlic cloves.
  • 1 can (15 oz) Great Northern beans.
  • 1/2 teaspoon smoked paprika.
  • 3 cups chicken broth.
  • 1 cup water.
  • 2 cups half and half.
  • 1 pound red potatoes.
  • 1/2 pound kale, chopped.
  • Red pepper flakes (optional).
  • Black pepper to taste.

Instructions

  1. Break into pieces. Brown in large pot.
  2. Sauté onion and garlic until onions soften.
  3. Add drained beans, paprika, broth, and water. Pour in tempered half and half. Bring to simmer.
  4. Slice potatoes thin. Add with kale. Stir until kale wilts.
  5. Simmer 15 minutes until potatoes are tender. Season with peppers.

Notes

Temper cream to prevent curdling.
Use any type sausage.
Great winter meal.
