- 8 ounces feta cheese, crumbled
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- Vegetable oil, for frying
- 1/4 cup honey
- 1 teaspoon fresh thyme leaves
Instructions
- Prepare the feta: Cut the feta into bite-sized cubes and pat dry with paper towels.
- Set up dredging stations: Place the flour in one shallow bowl, the beaten eggs in another, and the panko breadcrumbs in a third.
- Dredge the feta cubes: Coat each cube first in flour, then dip in the beaten eggs, and finally roll in the panko breadcrumbs until fully covered.
- Heat the oil: In a deep skillet, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C).
- Fry the bites: Carefully add the coated feta cubes to the hot oil in batches, frying for 2-3 minutes or until golden and crispy. Remove with a slotted spoon and drain on paper towels.
- Make the glaze: In a small saucepan, warm the honey over low heat and stir in the fresh thyme leaves.
- Glaze and serve: Drizzle the warm honey glaze over the crispy feta bites and serve immediately.
Notes
For a spicier version, add a pinch of chili flakes to the honey glaze. Best served fresh and hot.
