- 2 cups leftover mashed potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup all-purpose flour
- 1 large egg, beaten
- 1 cup breadcrumbs
- Salt and pepper to taste
- Oil for frying
Instructions
- In a large bowl, mix the mashed potatoes, cheddar cheese, salt, and pepper until well combined.
- Form the mixture into small balls, about 1 inch in diameter.
- Roll each ball in flour, then dip in the beaten egg, and finally coat with breadcrumbs.
- Heat oil in a deep fryer or large skillet to 350°F (175°C).
- Fry the balls in batches until golden brown and crispy, about 3-4 minutes per batch.
- Remove and drain on paper towels. Serve hot with your favorite dipping sauce.
Notes
For a healthier version, bake at 400°F for 15-20 minutes instead of frying. Store leftovers in the refrigerator for up to 2 days.
