  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1 egg, beaten
  • 1 cup breadcrumbs

Instructions

  1. In a bowl, mix mashed potatoes, cheese, green onions, egg, salt, and pepper until well combined.
  2. Shape the mixture into small balls.
  3. Roll each ball in breadcrumbs to coat evenly.
  4. Heat oil in a deep fryer or skillet to 350°F.
  5. Fry the bites in batches until golden brown, about 2-3 minutes per batch.
  6. Drain on paper towels and serve hot.

Notes
