- 1 cup breadcrumbs

Instructions
- In a bowl, mix mashed potatoes, cheese, green onions, egg, salt, and pepper until well combined.
- Shape the mixture into small balls.
- Roll each ball in breadcrumbs to coat evenly.
- Heat oil in a deep fryer or skillet to 350°F.
- Fry the bites in batches until golden brown, about 2-3 minutes per batch.
- Drain on paper towels and serve hot.
Notes
Make sure the mashed potatoes are cold before mixing to make shaping easier. Serve with sour cream or your favorite dipping sauce.
