- 1 pound ground beef
- 1 onion, chopped
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 2 cups shredded cheddar cheese
- 1 bag tortilla chips, crushed
- Sour cream for topping
Instructions
- Brown the ground beef and onion in a skillet over medium heat until the beef is no longer pink; drain excess fat.
- Add taco seasoning to the beef mixture and stir according to package instructions.
- In the crockpot, layer half of the crushed tortilla chips, followed by the beef mixture, black beans, corn, and diced tomatoes.
- Sprinkle half of the shredded cheese on top, then repeat the layers with the remaining ingredients.
- Cover and cook on low for 4-6 hours or until heated through and bubbly.
- Serve hot, topped with sour cream and additional cheese if desired.
Notes
For a spicier version, add jalapeños or use hot taco seasoning. This recipe can be prepared ahead and refrigerated before cooking.
