Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups shredded cheddar cheese
  • 1 bag tortilla chips, crushed
  • Sour cream for topping

Instructions

  1. Brown the ground beef and onion in a skillet over medium heat until the beef is no longer pink; drain excess fat.
  2. Add taco seasoning to the beef mixture and stir according to package instructions.
  3. In the crockpot, layer half of the crushed tortilla chips, followed by the beef mixture, black beans, corn, and diced tomatoes.
  4. Sprinkle half of the shredded cheese on top, then repeat the layers with the remaining ingredients.
  5. Cover and cook on low for 4-6 hours or until heated through and bubbly.
  6. Serve hot, topped with sour cream and additional cheese if desired.

Notes

For a spicier version, add jalapeños or use hot taco seasoning. This recipe can be prepared ahead and refrigerated before cooking.
