For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup sour cream
- 1 tbsp lime zest
- 2 tbsp lime juice
- 1 tsp vanilla extract
- 1 cup fresh blackberries, mashed
Instructions
1. Prepare the Crust:
- Preheat oven to 325Β°F and line a muffin tin with cupcake liners.
- Mix graham cracker crumbs with melted butter and press 1 tbsp into each liner to form the crust.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream, lime zest, lime juice, and vanilla.
- Gently fold in mashed blackberries.
- Divide batter evenly among the crust-lined cups, filling each about 3/4 full.
- Bake for 20-25 minutes until centers are set. Cool completely before refrigerating for at least 2 hours.
