Decadent Carrot Cake Bars with Cream Cheese Frosting

Moist and flavorful carrot cake bars topped with a rich cream cheese frosting, perfect for any occasion.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 1/2 cups grated carrots
  • 1/2 cup chopped walnuts (optional)
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan and line with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat eggs, granulated sugar, brown sugar, oil, and vanilla until smooth. Stir in grated carrots and walnuts (if using).
  4. Gradually mix the dry ingredients into the wet ingredients until just combined. Pour batter into the prepared pan.
  5. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
  6. For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until creamy.
  7. Spread frosting over cooled bars. Cut into squares and serve.
