Delectable Lemon Strawberry Cheesecake

A creamy and tangy cheesecake with a refreshing lemon flavor and sweet strawberry topping.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1/4 cup strawberry jam

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325Β°F. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
  2. In a large bowl, beat cream cheese and 3/4 cup sugar until smooth. Add eggs one at a time, then mix in lemon juice, zest, and vanilla.
  3. Pour filling over crust. Bake for 45-50 minutes until center is set. Cool completely.
  4. Top with sliced strawberries and brush with warmed strawberry jam. Chill for at least 4 hours before serving.

You can customize the seasonings to taste.
