Easter Bunny Poke Cake

A festive Easter dessert featuring a moist poke cake decorated to resemble a bunny, infused with colorful gelatin for a surprise inside.

  • Total Time: 2 hours 45 minutes
  • Yield: 12 1x

Ingredients

Scale
  • 1 box white cake mix
  • 1 1/4 cups water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 package (3 oz) strawberry gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 container (8 oz) whipped topping
  • Easter sprinkles and bunny-shaped candies for decoration

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Prepare the cake mix according to package instructions using water, oil, and eggs; pour batter into the pan and bake for 25-30 minutes or until a toothpick comes out clean.
  3. While the cake is baking, dissolve the strawberry gelatin in 1 cup of boiling water, then stir in 1/2 cup cold water.
  4. Once the cake is done and cooled for 15 minutes, poke holes all over the top using a fork.
  5. Pour the gelatin mixture evenly over the cake, allowing it to seep into the holes.
  6. Refrigerate the cake for at least 2 hours or until set.
  7. Spread whipped topping over the cooled cake and decorate with sprinkles and bunny candies before serving.

Notes

For a fun twist, use different flavored gelatins to create a rainbow effect inside the cake. Store leftovers in the refrigerator for up to 3 days.
