Easy Blueberry Cheesecake Swirl Cookie Recipe

For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 4 oz cream cheese, softened
  • 1/4 cup blueberry jam
  • 1/2 cup fresh blueberries

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F (175Β°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the butter mixture, mixing until just combined.
  5. In a small bowl, mix softened cream cheese and blueberry jam until smooth. Gently fold in fresh blueberries.
  6. Drop spoonfuls of cookie dough onto the prepared baking sheets, then swirl in the blueberry cheesecake mixture using a knife or toothpick.
  7. Bake for 10-12 minutes or until edges are lightly golden. Let cool on baking sheets for 5 minutes before transferring to wire racks.
