For the Crust:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 3 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 4 oz cream cheese, softened
- 1/4 cup blueberry jam
- 1/2 cup fresh blueberries
Instructions
1. Prepare the Crust:
- Preheat oven to 350Β°F (175Β°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the butter mixture, mixing until just combined.
- In a small bowl, mix softened cream cheese and blueberry jam until smooth. Gently fold in fresh blueberries.
- Drop spoonfuls of cookie dough onto the prepared baking sheets, then swirl in the blueberry cheesecake mixture using a knife or toothpick.
- Bake for 10-12 minutes or until edges are lightly golden. Let cool on baking sheets for 5 minutes before transferring to wire racks.
