Easy Blueberry Pudding Cake

A delicious and simple dessert featuring a moist cake layer with a sweet blueberry sauce underneath.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups fresh or frozen blueberries
  • 3/4 cup water
  • 3/4 cup granulated sugar
  • 1 tablespoon lemon juice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease an 8-inch square baking dish.
  2. In a medium bowl, whisk together flour, 1/2 cup sugar, baking powder, and salt.
  3. Stir in milk, melted butter, and vanilla until just combined. Spread batter into the prepared baking dish.
  4. In a saucepan, combine blueberries, water, 3/4 cup sugar, and lemon juice. Bring to a boil over medium heat, stirring occasionally.
  5. Pour the hot blueberry mixture over the batter in the baking dish. Do not stir.
  6. Bake for 30-35 minutes, or until the cake is golden and a toothpick inserted comes out clean.
  7. Let cool slightly before serving. The blueberry sauce will settle at the bottom.
