Easy Blueberry Velvet Cake

A moist and fluffy cake bursting with fresh blueberries and a hint of vanilla.

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh blueberries
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F (175Β°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Alternately add the flour mixture and buttermilk to the butter mixture, beginning and ending with the flour.
  6. Gently fold in blueberries.
  7. Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  8. Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

You can customize the seasonings to taste.
