- 2 cups all-purpose flour
- 1 teaspoon baking powder

- 1/2 teaspoon ground nutmeg

- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 cups grated carrots
- 1/2 cup crushed pineapple, drained
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, beat together the granulated sugar, brown sugar, and oil until well combined.
- Add the eggs one at a time, beating well after each addition.
- Gradually stir in the dry ingredients until just combined.
- Fold in the grated carrots, crushed pineapple, and walnuts if using.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bars to cool completely before frosting.
Notes
For a creamier frosting, use full-fat cream cheese and ensure it’s at room temperature before mixing. Store leftovers in an airtight container in the refrigerator for up to 5 days.
