- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (10 ounces) enchilada sauce
- 1 cup shredded cheddar cheese
- 8 flour tortillas
- 1/2 cup sour cream
- Optional toppings: chopped tomatoes, lettuce, and olives
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, cook ground beef, onion, and garlic over medium heat until beef is browned and vegetables are tender. Drain any excess fat.
- Stir in 1/2 cup of enchilada sauce and 1/2 cup of cheese into the beef mixture.
- Spoon about 1/4 cup of the beef mixture down the center of each tortilla. Roll up and place seam side down in a greased baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
- Bake for 20-25 minutes or until cheese is melted and bubbly.
- Serve with sour cream and optional toppings.
Notes
For a spicier version, add chopped jalapeños to the beef mixture. Leftovers can be refrigerated for up to 3 days.
