Easy Cheesy Ground Beef Enchiladas

These easy cheesy ground beef enchiladas are a one-pan family favorite! Tender tortillas filled with seasoned beef and smothered in melty cheese and zesty sauce. Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10 ounces) enchilada sauce
  • 1 cup shredded cheddar cheese
  • 8 flour tortillas
  • 1/2 cup sour cream
  • Optional toppings: chopped tomatoes, lettuce, and olives

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook ground beef, onion, and garlic over medium heat until beef is browned and vegetables are tender. Drain any excess fat.
  3. Stir in 1/2 cup of enchilada sauce and 1/2 cup of cheese into the beef mixture.
  4. Spoon about 1/4 cup of the beef mixture down the center of each tortilla. Roll up and place seam side down in a greased baking dish.
  5. Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  6. Bake for 20-25 minutes or until cheese is melted and bubbly.
  7. Serve with sour cream and optional toppings.

Notes

For a spicier version, add chopped jalapeños to the beef mixture. Leftovers can be refrigerated for up to 3 days.
