Easy Lemon Glazed Loaf

  • 1 cup granulated sugar
  • 2 tablespoons lemon zest
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/4 cup fresh lemon juice
  • For the glaze: 1 cup powdered sugar
  • 23 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the sugar, lemon zest, and softened butter until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the milk and lemon juice.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. For the glaze: In a small bowl, whisk together the powdered sugar and lemon juice until smooth. Drizzle over the cooled loaf.
