Elegant Grape and Cheese Bites Recipe

  • 4 ouncessliced almonds (about1 cup)
  • 1package (8 ounces) cream cheese, softened
  • 2 ouncescrumbled blue cheese, room temperature
  • 2 tablespoonsminced fresh parsley
  • 2 tablespoonsheavy whipping cream, room temperature
  • Appetizer skewers or toothpicks
  • 1to1-1/4 pounds seedless red or green grapes, rinsed and patted dry

Instructions

  1. Preheat the oven to 275°F (135°C).
  2. Pulse the almonds in a food processor until finely chopped (but be careful not to overprocess).
  3. Spread the chopped almonds in a 15x10x1-inch pan and bake until golden brown, which should take about 6-9 minutes. Stir occasionally to ensure even browning.
  4. Transfer the toasted almonds to a shallow bowl and let them cool slightly.
  5. In another bowl, mix together the softened cream cheese, crumbled blue cheese, minced parsley, and heavy whipping cream until the mixture is smooth and well-blended.
  6. Insert a skewer into each grape, then roll each one in the cheese mixture, ensuring an even coating.
  7. Next, roll the cheese-coated grapes in the toasted almonds, pressing lightly to adhere the almonds to the cheese.
  8. Place the finished grape bites on waxed paper-lined baking sheets.
  9. Refrigerate the bites, covered, until ready to serve.

Notes

Use Room Temperature Ingredients:Ensure that the cream cheese and blue cheese are at room temperature before mixing. This makes it easier to blend the cheeses smoothly without lumps.
Don’t Skip the Toasting:Toasting the almonds brings out their natural oils, enhancing their flavor and adding a lovely crunch to the bites.
Customize the Coating:If you want to add a bit of variety, consider using different coatings for the grapes, such as finely chopped herbs, crushed pretzels, or even a mix of seeds.
