- 1 cup graham cracker crumbs
- 1/2 cup white chocolate chips, melted

Instructions
- In a mixing bowl, beat the cream cheese until smooth.
- Add pumpkin puree, powdered sugar, and pumpkin pie spice; mix until well combined.
- Refrigerate the mixture for 30 minutes to firm up.
- Scoop out tablespoon-sized portions and roll into balls.
- Roll each ball in graham cracker crumbs to coat.
- Dip the balls in melted white chocolate and place on a parchment-lined tray.
- Add sprinkles if desired and refrigerate for 1 hour before serving.
