- 4 large egg whites
- 200g caster sugar
- 1 teaspoon vanilla extract
- 200ml double cream
- 200g mixed berries (such as strawberries, blueberries, and raspberries)
- Icing sugar for dusting
Instructions
- Preheat the oven to 120°C (250°F) and line two baking sheets with parchment paper.
- In a clean, dry bowl, whisk the egg whites until stiff peaks form.
- Gradually add the caster sugar, one tablespoon at a time, whisking continuously until the mixture is thick and glossy.
- Gently fold in the vanilla extract.
- Spoon the meringue mixture onto the prepared baking sheets, shaping into wreath circles about 10cm in diameter.
- Bake in the preheated oven for 1 hour, or until the meringues are crisp and dry. Turn off the oven and leave them to cool inside.
- Once cooled, whip the double cream until soft peaks form.
- Top each meringue wreath with whipped cream and arrange the mixed berries on top.
- Dust with icing sugar before serving.
Notes
For the best results, ensure the egg whites are at room temperature and free from any yolk. This recipe can be made in advance and stored in an airtight container.
